Ingredients

Caramel

Castor
Sugar – 4 tbsp

Water
– 2 to 3 tbsp

Pudding

Eggs

Butter

2 tbsp (Melted)

Milk
– 2 cups (approximately 250 ml)

Sugar
– 2/3 cup (approximately 100 gms)

Bread
–
4 to 5 stale slices
§
Vanilla
extract – 1 tsp Or Fresh Vanilla
strip

Cinnamon
powder – ¼ tsp
Method
1. Preheat oven to 160°C.

Pudding
mixture :
- Add the melted butter in
lukewarm milk (milk should not be hot).
- In a separate bowl, beat the
eggs. Add sugar and beat well till you get a smooth mixture.
- Now add cinnamon powder and vanilla
extract. Mix well.
- Pour in the milk mixture
gradually into the egg mixture. Mix well. Keep aside for a while.
- Prepare the baking dish by greasing it with butter. Keep aside.

Caramel
:
- Put sugar and water into a
saucepan over medium heat. Swirl around the mixture gradually till you get
the caramelized golden sugar syrup. It will take 2-3 minutes.
- Pour the caramel into the
baking dish. Coat the bottom of the baking dish with caramel by swirling a bit. Do this
process fast when caramel is hot, else it solidifies when cold.
- Let the caramel set for a
while in the baking dish.
4.
Pudding
:
- Tear the slices into medium
to big chunks and place them into the baking dish over the set-caramel bottom.
- Slowly pour in the pudding
mixture over the bread pieces.
- Press the bread with
fork/spoon a bit, for it to soak the pudding mixture. If the bread is very
stale let the mixture stand for few minutes.
- Place the baking dish in the
oven for 45 to 60 minutes.
- When the pudding is done, its
slightly brown on top and the top springs back when slightly pressed/tapped.
Serving

Remove
pudding from oven and let it cool.
§
Refrigerate
it for few hours, till set.
§
Scope
it out or invert it on a flat plate carefully and cut into desired shape.
§
You
can accompany the pudding with a scoop of Vanilla or Butter-Scotch ice-crème with
a spoonful of caramel sauce over it.
